Our story didn't start in a kitchen; it started under the stars. For generations, the Cruise family has believed that the finest barbecue is a labor of patience. We were raised on the smell of hickory and the discipline of a low fire that never goes out.
Every brisket and rib rack we serve undergoes a minimum 16-hour overnight session. We use only aged hickory and oak, tending the pits by hand to ensure the smoke is clean and the heat is steady. Because at the end of the day, quality simply cannot be rushed.
